Your hosts Sandra and Court Roberson both grew up in Cayo District, Sandra in Bullet Tree Falls Village and Court on family cattle ranches in Cayo, the last being Cedar Bluff, home of The Bluffs.
The original structure of the restaurant was a showbarn for Court’s Father’s purebred Nelore cattle and Quarter Horses. With careful redesigning to keep the ranch ambience, treasured trophies and photos remembering champion bulls and farm relics grace the walls. A modern kitchen compliments the outside grills and jumbo smoker (which can cook meat for 300 hungry souls at a lick).
Cooks Jackson and Alexis create lunchtime favorites as well as exciting fusion and vegan dishes featuring tropical and traditional ingredients. They are happy to meet special dietary needs when possible. A bevy of beverage selections – fruits and spirits- are available as well as The Bluffs’ special French press coffees.
While you dine, enjoy the panoramic views from the restaurant overlook the ranch. A few Quarter Horses remain but for the most part the ranch has been converted to organic cacao and fruit trees, providing ultra-fresh fare for the restaurant.
